Brown Rice with Diced Tomatoes

What you need: 

1 cup brown rice, cooked according to package directions
1 (14.5 oz) can diced tomatoes with zesty jalapenos
firm tofu, cut into bite-size pieces (optional)

What you do: 

This is a super-easy, put-it-on-to-cook-and-walk-away meal!
As rice is cooking, drain can of diced tomatoes into a baking dish or pan. Add tofu to juice and cook as desired.
When rice is done, mix in diced tomatoes and tofu and enjoy!
