Broccoli Salad with Sunflower Seeds

What you need: 

1 cup vegan mayonnaise
2 tablespoons white vinegar
1/3 cup sugar
2 broccoli crowns, chopped
1 large red onion, sliced thinly
1 cup sunflower seeds
1 (20 ounce) can pineapple tidbits, drained
1 (5 ounce) package vegan bacon, chopped (I use Lightlife Smart Bacon)

What you do: 

1. To make dressing, mix mayonnaise, vinegar, and sugar in a small bowl and set aside.
2. Combine broccoli, red onion, sunflower seeds, pineapple, and vegan bacon in a large bowl and toss gently.
3. Pour dressing mixture over salad and mix.
4. Refrigerate at least 5 hours, but preferably overnight to allow the flavors to combine.
