Broccoli and Cucumber Soup (Microwave Method)
500g (1 lb) broccoli, washed
1 large cucumber
60g (2oz) margarine
1 large onion, chopped
5 cups well seasoned vegetable stock
Trim broccoli, chop finely. Peel, halve, seed and chop cucumber Place margarine and onion in a heatproof bowl, microwave on HIGH 2 - 3 mins, covered. Add broccoli, cucumber and stock. Stir well, cover with a lid or plastic wrap, cook on MEDIUM (50%) power for 6 - 8 mins. Cool, puree in a food processor or blender. Serve, if desired, garnishe'd with a little yogurt and chopped chives.
