Easy Tofu Scramble BreakfastIngredients (use vegan versions): 1/2 a block of extra firm water packed tofu
1/4 teaspoon turmeric
1/4 teaspoon soy sauce
salt to taste
1/4 cup green pepper
1/4 cup diced onions
1/4 cup red pepper
1/4 teaspoon minced garlic
Directions:First drain the tofu with a paper towel by squeezing out excess water.
Crumble into a bowl to look like pieces of scrambled eggs. Add soy sauce and turmeric to the bowl and blend well, set aside.
In a frying pan sauté garlic and onions in
olive oil until translucent. Add peppers and continue sautéing until soft. Add tofu mixture to pain and sauté together until it looks like scrambled eggs.
This is a fairly simple recipe and I like it as is with the bacon and toast on the side.
This is also great served with potatos in a breakfast burrito or with any other ingredients you can think of.
Serves: 1-2
Preparation time: 20 min
This recipe was okay. I didn't have an onion but I did have a tomato, so I used that and some extra garlic to make up for it.
