Breakfast Sandwich

What you need: 

1/4" slice tofu
Salt and pepper
Flour, for coating
Olive oil
1 English muffin or bagel
Red miso
Tahini paste
optional: nutritional yeast, ground flax seed, garlic powder

What you do: 

1) Take a long, thin rectangular slice of tofu and wrap in paper towel for about 10 minutes. It doesn't need to be pressed dry. You want it dry enough that it doesn't make the bread soggy but moist enough that the inside is still creamy.
2) Heat a pan to medium and drizzle a small amount of olive oil. Meanwhile, salt and pepper each side of the tofu. Lightly dredge in some flour. The excess will shake off. Do not do this step until you are ready to put it in the pan. Saute the tofu on each side until golden. Place on a paper towel to soak up any excess oil. Sprinkle on some garlic powder.
3) Meanwhile toast the English muffin or bagel. When toasted, spread some miso on one half of the bread and tahini paste on the other. I sprinkle on some nutritional yeast and ground flax seed for extra flavor/nutrition. Add the tofu and put it all together!
Source of recipe: My mother was talking about how my brother in law made everyone breakfast sandwiches (with eggs and such) and the words made my mouth water. So I concocted this and have been enjoying it every morning.
