Breakfast Quesadillas

What you need: 

1 10 inch flour burrito tortilla
2 soy sausage links, or 1 serving of your favorite soy sausage
1 tablespoon vegan cream cheese (Tofutti Cream Cheese)
1 teaspoon pure maple syrup (optional)

What you do: 

Toss tortilla in skillet until warm. If using pre-cooked frozen soy-sage, warm in microwave for 30 seconds, otherwise prepare sausage accordingly. Fill half tortilla with Tofutti cream cheese and soysage and drizzle mixture with maple syrup over mixture. Fold tortilla. Grill until toasted on both sides Cut and enjoy.
