Amazing Healthy Blueberry Muffins

Ingredients (use vegan versions):

    2 cups whole wheat flour
    1 teaspoon baking powder
    1 teaspoon baking soda
    1/2 teaspoon salt
    1/4 cup sugar
    1/4 cup sugar substitute, such as xylitol
    1/4 cup canola oil
    1/4 cup apple sauce
    1 teaspoon almond extract
    1 cup water
    1 cup frozen blueberries

Directions:

Preheat oven to 375 degrees.

Combine all dry ingredients.  Gently stir in wet ingredients.  Fill muffin tins and bake 20-25 minutes.

Note:  I developed this recipe by adapting Sheilas recipe for whole wheat muffins - a GREAT basic muffin recipe.

Serves: 12

Preparation time: 30 minutes


Very good. Did use all sugar howe'ver.  This made 9 yummy muffins... not sure how one would get 12 full size out of this. The 9 went VERy fast... Smiley

I adjusted the recipe: Instead of 1/2 cup total sugar, I used just a little under 1/4 cup of brown cane sugar, substituted soybean oil for the canola, upped the apple sauce to 1/2 cup (since I cut back on the sugar), substituted vanilla extract for the almond extract, and instead of 1 cup water, I used 3/4 cup plain soy milk and 1/4 cup water and added walnuts in addition to the blueberries. It came out very moist and very good. Dont know if the substitutions I made are vegan since I'm a newbie vegetarian :-)

These were yummy and healthier than most, but came out very moist and easily squishe'd which doesn't help for presentation. They were also a little bland- could have used a bit more sweetness. Maybe use more flower and a bit more sugar?

I printed out this recipe a long time ago and use it all the time. I am not usually very good at baking but these muffins are quick and easy and always turn out great.  If someone wants a sweeter muffin maybe add a little extra sugar but I love them just how they are.

I liked these--and they weren't super sweet.  I would recommend using fresh instead of frozen blueberries.  When I used frozen, the whole batter looked sort of blue-ish.
