Blueberry Pancakes

What you need: 

2 cups flour
4 teaspoons baking powder
1 teaspoon salt
1/4 cup + 2 tablespoons sugar
2 teaspoons vanilla
2 egg replacers (http://vegweb.com/index.php?topic=7678.0)
1 2/3 cups nondairy milk (I use soy)
2 tablespoons vegetable oil, if desired
1 cup blueberries (frozen or fresh)

What you do: 

1. Combine ingredients except blueberries, and stir until blended. Stir in blueberries.
2. Preheat and oil a pan or griddle. Pour 1/4 cup batter into pan and cook until the edges are dry.
3. Carefully flip the pancake over and cook until golden.
Source of recipe: I went by someone else's recipe, but used my own portions and changed a few things.

SO HOW'D IT GO?

Simple and delicious.
I used whole wheat flower and a combo of fresh and frozen blueberries. I completely forgot about the vanilla, but they still turned out good!

YUM!!!  I just made these for my parents and aunt.  The pancakes were described as being, "Great!", and "Restaurant Quality".  This was very nice to hear, considering that my family is very skeptical of my vegan ways!

I made a few changes to the recipe that added to the great flavor.  Instead of egg replacer, I used a mashed up banana, and I substituted almond milk for the soy!  Simply decadent :)

These were great!!  I made them for Thanksgiving morning.  I used whole wheat flour, didn't have any vanilla, used raw turbinado sugar, and used blueberries and fresh strawberries.  They were still very good even with these modifications.  The recipe made 6 pretty good sized pancakes.  They were a little dense but that was probably because of the whole wheat flour.  I will use this recipe again next year for our Thanksgiving morning tradition of homemade pancakes.

these win! best texture, flavor and easy recipe. DELICIOUS! I used one super ripe banana for the eggs. and just 3tsp of baking powder. thanks for sharing the recipe!
