Blueberry Lemon Muffins

What you need: 

1 cup flour
1 cup whole wheat flour
1 and 1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup sugar
Zest from two lemons
1 cup soymilk
1/3 cup oil
1 teaspoon lemon juice
1 tablespoon vinegar
1 1/2 cup blueberries

What you do: 

1) Preheat oven to 400 degrees Fahrenheit.
2) Mix together both flours, baking soda, and salt in large bowl. In a separate bowl, combine sugar, zest, soymilk, oil, lemon juice, and vinegar. Stir liquid ingredients into dry ingredients and mix well. Gently fold in blueberries.
3) Place mixture into muffin tins about 3/4 full and bake for 20 minutes.

SO HOW'D IT GO?

These are by the far the best muffins I have ever made, maybe even eaten. I used all whole wheat flour, zest of only 1 lemon, coconut sugar and oil and then added a brown sugar topping.  I didnt read the instructions so I just mixed all the wet ingredients one at a time (oops). I was worried they wouldnt turn out cause I overmixed so much but they are crumbly and tasty. SO SO SO good!
