Black Bean Salad with Corn

What you need: 

1-1/2 cups cooked black beans
1 cup corn
1 large lime, zested and juiced
1 teaspoon oregano, fresh or dried
1/2 teaspoon cumin
1/2 teaspoon coriander
pinch cayenne
pinch salt
1 tomato, diced
1 bell pepper, any color, chopped
2 green onions, chopped, or a handful of chives
2 tablespoon fresh cilantro, minced (optional)
1/2 tablespoon olive or flax oil (optional)

What you do: 

1. In a bowl, combine the beans, corn, lime zest and juice, oregano, cumin, coriander, cayenne, and salt. Leave this to marinate for at least 10 minutes, or up to 2 hours. The longer you leave it, the more the flavors will infuse into the beans.
2. Stir in the rest of the ingredients (tomato, bell pepper, onions, cilantro, and oil). Serve.
