Black Bean Mango Ceviche

What you need: 

1 (15 ounce) can black beans, rinsed and drained
1 large mango, skin removed and diced (under-ripe ones work perfect for this)
1 long chili pepper, seeds removed and minced
2 cloves garlic
2 teaspoon lime zest
3 limes, juiced
2 tablespoons orange juice
1 tablespoon raw agave nectar
cilantro, chopped, to taste
salt, to taste

What you do: 

1. Combine all ingredients in a bowl.
2. Let marinate at least over night. The acid from the lime and orange juice will cook the mango.
It doesn't get any easier than that. You could eat this over rice, with tortillas, or by itself. This is a great raw dish. Enjoy!
Source of recipe: I was just at the grocery store and found some beautiful organic mangoes which inspired me to create this lovely recipe.
