Black Bean Burgers

What you need: 

1 can black beans, drained
1/4 cup fried onions (fresh or packaged)
2 slices multigrain vegan bread, crumbled finely
Cracker crumbs
Salt, pepper, other seasonings (your choice)
Oil or no-stick spray (for frying)

What you do: 

In large bowl, mash beans. Mix in crumbled vegan bread, onions and spices. Mix thoroughly, and add just enough cracker crumbs to make patties capable of holding together. Form mixture into patties or balls. (These can be coated with more cracker crumbs, if desired.)
Fry patties on both sides in a lightly greased frying pan.
Serve on buns, or any way you like em!
P.S.: Works with almost any kind of bean!

SO HOW'D IT GO?

cool cool. i just made these but i added a whole bunch of extra stuff. i added extra garlic, ground cumin, ground coriander seed, chili powder, a chopped semi-dry red chili, a little bit of ground round and grated zuchinni. instead of frying them, i covered in flour and put them under a high broiler for a few minutes on each side. i didn't add the bread but that was my bad (we're outta bread...) because now they're a little sketchy with holding together and i didn't want to add too much cracker, but no matter, they're alright. i've made this type of burger befopre and added mushroom and grated carrot. mmmmm mmmmm good!! thanks.

oh right and i fried the onion, ground round, zuchinni and spices and set to cool before i added them to the mashed beans.

We really enjoyed these.  I added 2 large cloves of minced fresh garlic about 1/2 way through cooking the onions and a couple of dashes of cayenne for good measure!

My 8 yo son loved these.  We are just now converting to being vegetarian (not vegan at this time) and I was thrilled with the results.
