Black Bean Burgers

What you need: 

1 (20 ounce) can black beans, rinsed and drained
1/4 cup yellow onion, diced
1/4 cup red bell pepper, diced
1/2 teaspoon ground cayenne pepper
1 egg replacer (http://vegweb.com/index.php?topic=7678.0)
1 cup seasoned bread crumbs
2 tablespoons fresh chopped cilantro
2 tablespoons olive oil
salsa, to garnish
alfalfa sprouts, to garnish
guacamole, to garnish

What you do: 

1. Preheat oven to 350 degrees F. Grease baking pan. In a large bowl, mash black beans then add onion, bell pepper, cayenne pepper, egg replacer, vegan bread crumbs and cilantro.
2. Blend until all ingredients are mixed well. Form bean mixture into patties and place on prepared pan.
3. Bake for 10 minutes. Alternatively, fry them in olive oil. I recommend baking them. Serve with garnishes, if desired.

SO HOW'D IT GO?

Delicious. I changed the recipe but it's a good base anyway. Didn't have any red peppers so I two diced jalapenos. I didn't have any Mexican spices or cayenne so I added like three packets of the taco bell mild sauce I had laying around haha. I also brushed the burgers with lime juice before baking - I'll add more next time.

After baking without flipping the burgers for about fifteen minutes I pan fried them. SO GOOD.

ALSO. Most important! I left out the egg substitute and instead of using breadcrumbs I used Saltine cracker crumbs. They stayed together very well.

If you still think the recipe is too "mushy", try adding some veggies that won't cook all the way like grated carrot or zucchini for some bite

;)b These are great!! I modified mine a little by adding garlic and i doubled the recipe to make enough to freeze. nom nom  :D

When a recipe calls for bread crumbs, there have been many times that I will use (cooked and refrigerated) quinoa.  The quinoa works well and it helps with the fiber and protein.  I try hard not to use bread of any form so I've experimented with other things.  Quinoa and lentils seem to work for many recipes and helps keep things together.  Hope this helps.  :)

Made this black bean burger recipe and froze it.  Took it camping for a dinner.  It was very tasty.  The burgers froze very well so when we were ready to eat it for dinner on the third night, it was delicious.  As a sandwich,  husband placed tomato, lettuce and vegan mayo on it.  He ate 2 and was completely satisfied.  I placed lettuce and hot sauce on mine.  We had to "fry" it on the campsite, placed olive oil in the pan and the burgers did not fall apart.  I used panko bread crumbs.  Next time I plan on using quinoa instead of bread crumbs.  I highly recommend this recipe to anyone who is afraid of trying black beans.  I'm thinking about making a "meatloaf" out of it.  EXTREMELY FILLING, I could only eat 1 for dinner along with a salad!  Thank you very much for the recipe! ;)b

Made these last week, froze them, and thawed one to eat tonight.  My first ever attempt at making a veggie burger of any sort.  It didn't hold together very well, but that didn't really matter.  Taste was fabulous.  I really enjoyed it.  Will definitely make again.

Well Hello! This recipe looks amazing, but I have a questions, as opposed to a review, but I will review it after I get some feedback from all you Gluten Free vegan cookers out there; have you found a good substitute for the bread crumbs? I was thinking of trying either cooked millet or brown rice. Any thoughts, tips, suggestions? Thanks!

Well Hello! This recipe looks amazing, but I have a questions, as opposed to a review, but I will review it after I get some feedback from all you Gluten Free vegan cookers out there; have you found a good substitute for the bread crumbs? i was surprised by how good these turned out. i added mushrooms too and used cornstarch/water as an egg substitute. they turned out very good!

These are amazing burgers... I couldn't find black beans anywhere though ( Australia doesn't even have black bean sauces round much anymore, weird) but I subbed with kidny beans and I've tried them with chickpeas  :)>>>

I loved these! I ate served them with Duofilia's Luscious Oatmeal Dinner Rolls (used them for breadcrumbs as well) and stuffed them full of tomatoes, leafy greens, onions and avocado then dipped them in homemade bbq sauce.

Such a delight ;)b
