Best Tasting Pancakes Ever! Vegan or Otherwise
What you need:
1 teaspoon vanilla
1 egg replacer (http://vegweb.com/index.php?topic=7678.0)
1 cup nondairy milk (I use soy)
2 tablespoons vegetable oil
1 cup white all purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
3 tablespoons sugar
What you do:
1. Mix wet ingredients in a medium sized bowl. Mix dry ingredients in a larger bowl.
2. Pour wet ingredients into dry; mix well until smooth consistency.
3. Drop ladlesful onto medium heat (preheated) pan. Flip over when each pancake begins to bubble on top.
Serve with vegan buttery spread (if desired) and maple syrup.'

Mmmmmm! :)>>> Upon seeing reviews saying these could be made without soymilk, in lieu of faux dairy products I cast aside my usual pancake recipe.
And dang, this is delicious! :> I mean, wow. Easy - I didn't use two bowls, I just mixed the dry then threw in the wet - and containing extremely simple ingredients. I didn't banana it up like some of the reviewers, just used a flax egg, and these came out excellent. Next time I might use a TINY bit less salt though.
Oh man! These are sooo delicious! Even my friend who HATES pancakes loved them. They were SO good, I didn't even use syrup.
These are great! I've been using 1/4c organic pumpkin puree as my egg replacer, adding a TON of cinnamon, leaving out the oil, and using vanilla hemp milk and they come out SO, SO good! I especially like them with homemade cranberry sauce and a little maple syrup on top.
Simply amazing! :> I halved the recipe and used whole wheat flour and a banana as the egg replacer. I then added slices of banana and chopped walnuts to make banana nut pancakes.

Like others have said, the title says it all! I've tried other pancake recipes on here and they just tasted way too floury and carbohydratey..bleh. But man these were great! I added chocolate chips and my fiance and I were eating the batter hehe ;D. They were fluffy and delicious. Kinda like a chocolate chip cookie. I ate mine without syrup I liked 'em so much. They cooked fast, too, only 2 minutes or so on each side. Very easy to make. Perfect amount, too. They made about 5 medium sized pancakes. I will use this from now on when we want pancakes in the morning..thank you! :)
Yummy! A little sweet for my taste but my little brother couldn't get enough!
The trick to keeping them fluffy is to flip them when only a few bubbles have formed. Keep that air trapped! I also upped the baking powder, which seemed to help. The applesauce makes them a bit heavy, so I might try less than the standard 1/4c I use when replacing eggs. The applesauce has a lot of natural sweetness, so I'll cut down the sugar next time.
Overall, GREAT recipe! Actually tastes like pancakes! :)

This recipe is so simple and delicious. I used a banana as the egg replacer and added a ton of cinnamon to the dry ingredients. It was so fluffy and tasted as good as it smelled.
These are fantastic! Used half a banana for the egg and applesauce for the oil. Perfect!
