Best Frosting Ever

What you need: 

2 ounces unsalted (or salt-reduced) vegan butter, soft
2 cups vegan powdered sugar
2 tablespoons fruit jelly or jam (raspberry or strawberry work best)
1 to 2 teaspoons vanilla extract

What you do: 

1) Beat the vegan butter spread in a small mixing bowl until it's a pale color. Beat in the fruit jam.
2) Sift the sugar twice. The vegan powdered sugar must be pure sugar, not frosting mix which contains cornstarch.
3) Transfer the jam mixture to a larger mixing bowl, and beat in the sugar a couple of tablespoons at a time. Add the vanilla extract and beat the mixture until very soft and smooth.
You can substitute 2 tablespoons of sugar with cocoa or use coconut liqueur or fruit schnapps instead of vanilla extract.

i'm confused.  powdered sugar does have cornstarch in it as well.

yeah, i hear you. i used powdered sugar that contains cornstarch. every package at the store had cornstarch. i think it turned out  a little gummy-er than it should have been, but still very good.

:D with my first taste of this frosting all i could hear was "pour some sugar on me..."  i'm not a big def leppard fan, but when the shoe fits...this frosting is definitely 'sticky sweet' :P

it was almost scandalous on top of the lemon yogurt cupcakes i made (from this web site). my sister-in-law took one bite and said "my gosh, it's like a flavor explosion in my mouth!"

i used a chunky strawberry jam. so, every now and then you'd get a chunk, yum! the jam made the frosting a delicate pink, to my nieces delight!

this will be my frosting recipe, for when i'm feeling a bit naughty! delicious.

I had some spice cake leftover, but it was getting kind of dry (couple days old) and I was also craving something sweet tonight.  I just tried this recipe and used orange marmalade.  I figured it would go well with the spices.  Mmmmm.  This totally satisfied my sweet tooth, without being too rich.  I didnt measure the ingredients since I only had a few peices left over and didnt want too much icing, but the recipe is easy enough you can just wing it!  It did end up too thick though, so I added a couple drops of orange juice.  Ohhhh this is sooo good.  Looking forward to more leftover cake tomorow :)>>>

This frosting is soooo good! I never would have thought of adding preserves but it is perfect on chocolate cake...
I didn't sift the sugar cuz I don't have a sifter, so it turned out kinda thick, but it is delicious!!!

This IS the best.

I used Earth Balance spread and strawberry jam.  It's amazing what a little bit of jam can do for flavor.  I frosted a single-layer, 9-inch round cake.  I suggest if you wanted to do a double-layer, to just make a tad more (since the surface area is almos the same).  Also, I frosted the cake while it was still a bit warm because it's easier to spread the Earth Balance when it's soft.

This really was delicious frosting.  I used 2 tbs raspberry preserves.  I think it would be fun to try different kinds, orange or grape, maybe.  The raspberry went well with the chocolate cupcakes.
