The Best Chili Ever
1 onion, chopped
2 cloves of garlic, minced
2 cans black beans, drained and rinsed
1 can kidney beans, drained and rinsed
1 can diced tomatoes, with juice
1½ cups corn
2 tablespoon tomato paste
2½ tablespoon chili powder (or more, to taste)
2 teaspoon ground cumin
1 green bell pepper, diced
Spray a large pot with cooking spray. Sauté the onions and garlic over medium heat until lightly browned. Add remaining ingredients. Simmer at least 30 minutes, covered, until peppers and onions are at desired tenderness.
If desired, serve in a hollowed sourdough round with vegan bread on the side.
