Best Breaded and Fried Seitan

What you need: 

1/2 teaspoon salt and pepper
1/4 teaspoon onion powder
1 cup flour
2 tablespoons nutritional yeast flakes
1 1/2 tablespoons yellow mustard
1/4 cup water
oil, as needed for frying
1 tablespoon baking powder
8 ounces seitan chunks

What you do: 

1. Mix the salt, pepper, onion powder, flour and nutritional yeast in small bowl. Mix mustard and water in a separate bowl. Heat oil, for frying.
2. Add 1/3 of the dry mixture into the wet mixture. It will get thick and batter-like. Lastly, add the baking powder into the dry mixture.
3. Coat the seitan with the mustard mixture, then with the dry mixture. Fry in hot oil until golden and crispy.
These are awesome with bbq or in wraps, salad etc. They taste like KFC strips, which is just wrong, but so good.

SO HOW'D IT GO?

I made my own seitan using a broth from Sarah Kramer's cookbook, and this was awesome.  I will have to make it again.  I think it might get a more "chickeny" flavor if you add some sage or maybe poultry seasoning to the dredging mixture, and I'll have to try that next time.  It probably will also rock with a bit of gravy.

I had some store bought seitan and used it for this recipe. I also had dijon mustard only so used that instead, this recipe was to-die-for. Tasted so much like the real deal that it scared us. A keeper for sure.

what seitan recipe did you use for these or was it store bought?

that could make a world of difference since seitan can be made so many ways it's crazy! and i would love to try this!

I made this using Bryanna Clark Grogan's chicken seitan, and it was good, ;)b not great. The coating worked really well and I had no problems getting it to stick. The texture was great too, but the mustard flavor didn't really come through for me.
