Ben's Bodacious Bars

What you need: 

Vanilla Chocolate Chip Base:
2 1/4 cups flour
2 teaspoons baking soda
1 teaspoon salt
1 cup margarine, softened
3/4 cup each of brown and white sugar
1 tablespoon vanilla extract and 1 cup chocolate chips
Brownie Middle:
1 1/3 cups flour
1 1/3 cup sugar
3/4 cup margarine
1/2 cup soy milk
3/4 cup baking cocoa
1 1/4 teaspoon each soda and salt
Cookies and Cream Top:
1 bag vegan chocolate chips (minus 1 cup for cookie base)
1/2 cup soy creamer (substitute soy milk + 2 TB margarine)
1/2 cup powdered soy milk
1 cup sugar
1 package chocolate or vanilla sandwich cookies, roughly chopped

What you do: 

Preheat oven to 350 F and grease a 9x11 in pan (size is a bit flexible)
Vanilla Chocolate Chip Cookie Base:
1. Combine margarine and sugars2. Add remaining ingredients and spread into pan evenly3. Bake for around 20-25 minutes until just golden brown
Meanwhile the first layer is baking prepare-Brownie Middle:
1. Combine margarine and sugar2. Add remaining ingredients3. Spread on top of the cookie base once it has finished baking (you can add the second layer as soon as it is done, no need to let cool)4. Bake again about 20-25 minutes
Meanwhile the second layer is baking prepare-Cookies and Cream Top:
1. Combine soy creamer, powdered soy milk, and sugar in a microwave bowl2. Add chocolate chips and microwave about 1-2 minutes until smooth, stopping to stir every 30 seconds3. Add cookie pieces and spread on top of the brownie layer when it's finished baking!
Enjoy! You're Done!
This makes at least 48 cookies. I find it is easier to cut small pieces once the bars have completely cooled. I even put them in the refrigerator or freezer a bit when I really want to get perfect squares and be fancy.

SO HOW'D IT GO?

Yeah so these bodacious bars are most non- non-henious.
The cookie layer was hard as a rock, and completely unedible. I only put them in for 17 minutes, and I had them in a metal pan with parchment paper in between so I could get them out easier. The brownie layer and cookies and cream layer was good though.
I wish the instructions would have said that the chocolate goo that you mix the cookies in would melt the cream in the cookies though. I would haven't have worried so much about keeping the cookies together.. and I probably would have broken them up smaller.
Overall, these were only okay. If the cookie layer hadn't of been ruined, maybe it would have been better. I did every the recipe said, word for word, so -Shrugs-
These were pretty expensive too..

uh..i'm pretty sure that you're should  cover the top with foil..?, because i've been baking them for over an hour...the top and sides are getting burnt, while the middle is still batter and overflowing over the sides...this took a lot of time and money and i'm pretty sure they're not going to be worth eating, although if cooked correctly, they would be amazing.. (the only thing i didn't follow in recipe is that my glass pan is 11 1/2 in by 8 in, but that shouldn't matter..)

These are EVIL!!! I made these for my parents to take to an out of state party and they lost their minds!! I cut them into 4 dozen squares and only gave them 2 dozen. The other 2 dozen I wrapped individually and handed out to people at my doctor's office, physical therapy, etc. Their eyes nearly popped out of their skulls. I don't know what else to say. Insanely awesome recipe! Just....sick. I can't believe no one has reviewed it yet. I hope this gets people to try it...like the pictures weren't enough of a good reason.

Oh yeah, I used half chocolate cream/chocolate cookies and half vanilla cream/vanilla cookies for the top layer. Oh man  :D
