Beet and Corn Salad
What you need:
1 can sliced or diced beets, rinsed and drained
1 cup fresh or frozen corn
1/2 small white onion, minced
1/4 cup fresh parsley, minced
1/2 cucumber, diced
1 teaspoon dried dill weed
1 teaspoon garlic powder
1/4 teaspoon black pepper, or to taste
1/2 teaspoon salt, or to taste
1 small lemon or 2 tablespoons lemon juice
2 tablespoons red wine vinegar
What you do:
Mix all ingredients in bowl. Let sit for at least 30 minutes in the fridge. Stir again before serving.

SO HOW'D IT GO?
Had a potluck yesterday and today and I brought this salad to both. Everyone loved it and one person requested the recipe. I changed the proportions a bit & added a few veggies that needed eating. I used fresh dill from my freezer and I think it was way better because of this. I also added a touch of sugar thinking that the lemon and vinegar would be too strong, but because of the sweetness of the beets and corn, it doesn't seem like an issue. Oh, and I added olive oil. Great recipe!!
this was good, but i think it will be better after a night in the fridge. i left out the onion and parsley (didn't have any). DR didn't like it, but she doesn't like beets. oh, i used raw beets and corn in the dish, making it mostly raw. yum! it was quick and easy to make. if you like the veggies, you'll like this salad. it's different but not too different.
