Beautiful and Quick Miso Soup!

What you need: 

1 tablespoon olive oil, or olive oil cooking spray
2 stalks celery, finely chopped
1 medium onion, chopped
1/3 cup packed, chopped baby spinach
4 cups water
2/3 teaspoon salt
8 ounces medium tofu, diced into small cubes (or 1/2 12-ounce package)
5 tablespoon mellow white miso paste
black pepper or chili powder, to taste

What you do: 

1. In a saute pan over medium heat, heat olive oil. Add and soften (not brown) celery, onion, and spinach.
2. Add the water, salt, and tofu, and simmer for 8 minutes.
3. Add miso. Simmer and continually stir until miso is dissolved, about 5 minutes.
4. Serve sprinkled with black pepper or chili powder. Enjoy your easy and delish soup!
Source of recipe: I created this recipe one day when I was trying to get rid of some limp celery and spinach. Isn't experimenting great?
