Beans Rhubarb Cobbler

What you need: 

1/4 cup margarine
1/2 cup sugar
1 cup flour
2 teaspoon baking powder
1/4 salt
1/2 eden soy milk (vanilla)
3 cup diced rhubarb
1 cup fruit juice

What you do: 

Cream margarine and the vegan sugar until its fluffy. Sift flour, baking powder and salt together; stir into margarine, mixing alternately with soy milk. Beat till smooth. Pour into a loaf pan. Pour rhubarb on top of the mix. Then sprinkle 3/4 cup vegan sugar over the rhubarb. Pour fruit juice over the top. Bake at 375 for 45 to 50 min. Serve with your favorite non dairy topping.

SO HOW'D IT GO?

Excellent!  Mine turned out very watery, but after it set in the fridge it turned out great!  :)

we used rhubarbs, strawberries & orange juice.. yummy!
