Beans and Rice: The BEST RECIPE

What you need: 

1 can of organic black beans (Eden, Shari Anns,etc.)
1 small onion
half of red or green pepper (whichever you prefer) (or a little of each)
half of a small (8 oz) can of Hunts Tomato sauce (Hunts is vegan)
olive oil
salt and pepper

What you do: 

1. Cut up the onion into small pieces, along with the pepper.
2. Saute in a small-medium sized pot, with some olive oil you can just drizzle enough on the onion and pepper to cover, or you can measure out in tablespoons, its according to how much oil you want to use)
3. Add at least 1/4 of salt ( I use sea salt) or more
4. Add pepper (I usually just use a pepper shaker and shake it about 10 times, sometimes more) Saute on low heat until veggies are soft
5. Add half a can of tomato sauce, followed by can of black beans. Let it come to a quick boil, then reduce heat to low or simmer. The longer you let it simmer, the more flavorful the dish. Stir occasionally.
*You can use any kind of beans, I just prefer black beans Serve with rice. Enjoy.
*This is a simple dish. You can adjust any of the ingredients according to taste!

I like this recipe. I've made this a couple of times. First, following the recipe close to verbatim ( unless I was supposed to drain the liquid from the beans which I didn't do either time ), then the second time modifying the ingredients as others have done. 

The first time, although it was good, I thought it seamed a little too bean/pasty tasting for my liking. Maybe I should have drained? Anyway, the second time I made it, I added about 10oz of spaghetti sauce, a little more onions and pepper, a couple of sticks worth of chopped celery and three shakes of Lousianna Hot Sauce. I liked the results better. As accompaniment, I made perfect basmati rice with instructions from this site ( topic=12431.0 )

Incidentally, I used generic cans of beans and tomato sauce both of which contain a fair amount of sodium, so I skipped the additional salt.

What a fantastic simple recipe.  I made it to the letter using a red pepper, because it's sweet flavor comes out better in the slow saute to start this recipe then a green pepper would.

I served it over basmati rice and found it to be very satisfying. I liked its simple flavours and I think adding spices would just turn it into a poor man's chili.

PS: ALWAYS drain and rinse your beans (black bean sludge is good for nothing!).


I added a bit of chili powder along with some cumin as mentioned and it turned out amazing! 

Also, I didn't know if you were supposed to drain the beans, I doubled the recipe so one can I drained one can I didn't, if anyone else has a better idea, I suggest draining most of the fluid out altogether.


I enjoyed this recipe.  Works best as a side dish.  :)


I cooked 1/2 cup of Basmati rice & added it to the recipe. Also, instead of half a can of tomato sauce, I used homemade sauce & lots of it. This turned out really well....easy & delicious.
