Bean and Pasta Soup
1/2 medium green pepper, chopped
1 medium onion, minced
1 clove garlic, minced
1/2 teaspoon dried basil leaves
1 tablespoon olive oil
1/2 cup elbow macaroni
4 cups boiling water
1/4 teaspoon salt
2 10 oz. cans tomato sauce
1 16 oz. can dark red kidney beans
1/4 teaspoon pepper
2 tablespoons lemon juice
1. Saute green pepper, onion, garlic, and basil in oil.
2. Cook macaroni and salt in water 10 minutes.
3. Add green pepper mixture, sauce, beans, pepper, and lemon juice. Mix and heat thoroughly.
Try experimenting with your favorite beans and/or noodles.
