BBQ Onion Sandwich

What you need:

1 vidalia or other sweet onion, sliced
2-3 tablespoons water or vegetable broth
1/2 cup barbecue sauce (I like homemade)
2 Kaiser rolls

What you do:

1. Saute onion in water or vegetable broth.
2. When the onions are soft and limp, add barbecue sauce.
3. Scoop this onto rolls and serve them up.
This is not only vegetarian but low fat too.

SO HOW'D IT GO?

This had to be the most delicious mess ever. Made it last night for dinner, and had it again for lunch today! With a bit of mustard, this sandwich is awesome!

I was really intimidated by it. An onion sandwich seemed weird. But it was really, really great. Don't knock it until you try it! :)

I used to make this when all that was left in the house was bread and onions! My favorite go to sammy when nothing sounds good at all!!

mmmm I cooked the onion slices with a little bit of olive oil until they began to brown, and added mushrooms as well.. I served them on rolls with tomato and they were great. this is a wonderful, sloppy, in-a-hurry meal!

I bet this would be good with 'angry onions' too. Got the idea from red robin, but they put tobasco on the onions when they cook them.

:)  This was really great! I added piclkles, tomatos, lettuce and a little of dragonfly's uncheese sauce. YUM! The only thing I would recommend is chopping the onions, because if you leave them as rings when you take a bite all of the onions come out together... anyway, thanks for the great idea!
