3 potatoes, peeled and diced
olive oil, as needed
2 to 4 tablespoons finely chopped onion
1 teaspoon minced garlic
1 or 2 red peppers, sliced
2 to 3 green chillies, finely cut
1/2 cup fresh cilantro, finely chopped
3 pinches coriander powder
salt and pepper, to taste
1/2 teaspoon lime juice
1. Heat oil and fry potatoes until crisp. Set on a paper towel to drain the oil. In another pan, heat olive oil then add onions, garlic, red pepper, green chillies, coriander powder and cilantro and saute.
2. Add potatoes and salt and pepper, to taste.
3. Mix well and add lime juice. Serve immediately.
