Barley & Wheat Soda Bread

What you need: 

2 cups plain flour
2 cups barley flour
1 tablespoon sugar
2 teaspoons baking soda
3 teaspoons baking powder
a pinch salt
1 1/2 cups water
2 teaspoons cider vinegar

What you do: 

Preheat an oven to 190° C (375° F). Sieve and combine the dry ingredients. Add wet ingredients and mix well. Turn dough out onto a lightly floured surface and knead for about two minutes, no more. Lightly grease a baking tray. Shape dough into a round loaf and cut a cross into the top. Place on the tray and bake for 40 minutes.
Optionally, to soften the crust, brush with rice/soy milk while the cooked loaf is still hot. Best used within 2-3 days.
