Banana Zucchini Bread or Muffins

What you need: 

1 cup grated zucchini
1 1/2 over-ripe bananas, mashed
1/2 cup oil
1 cup sugar
1/2 teaspoon vanilla
1 1/2 cups flour
1 teaspoon nutmeg
1/2 tablespoon baking soda
1/2 teaspoon baking powder
1/2 tablespoon cinnamon
1/2 teaspoon salt
3/4 cup chopped walnuts, optional

What you do: 

1. Preheat oven to 350 degrees F. Lightly grease 9" bread pan or 6-muffin pan.
2. Stir zucchini, bananas, oil, sugar, and vanilla together. Mix with hands if necessary to break up banana chunks.
3. Add the remaining ingredients and stir well.
4. Pour batter into prepared bread pan or muffin tin and bake 50-60 minutes for bread, 30 minutes for muffins.

SO HOW'D IT GO?

i made the loaf on my birthday a while ago, followed the recipe exactly as stated (used walnut oil)... and it was the star of the show! no other vegans/vegetarians at the table. definitely one of my favorites :)

Really fantastic and easy! I used 2 ripe bananas and less sugar, some extra zucchini, and made the loaf instead of muffins. I also used whole wheat flour which tastes so good with the banana. Thanks so much.

This was the inaugural recipe for my new mixer and food processor. God, was it a good one. I made 4 batches. The cook times are really accurate for the loaf and 6-muffin pan. My 12-muffin pans didn't turn out as light and fluffy, but they were still amazing.
