Banana raisin muffins

What you need:

1/3 cup raisins
water
3 very ripe bananas, mashed
2 tablespoons oil
2 tablespoons applesauce
1/3 cup agave syrup or other liquid sweetner
2-3 dashes green stevia powder
2 cups flour
1 teaspoon salt
1 teaspoon baking soda

What you do:

1. Preheat oven 350 degrees F. Place raisins in a small bowl with water and let them soak for a few minutes. Mix bananas, oil, applesauce, liquid sweetner, stevia powder, and raisins.
2. Combine flour, salt, and baking soda in another bowl then slowly mix these dry ingredients with the wet ingredients. You may need to add a handful of extra flour if the mixture looks too wet.
3. Grease muffin pan and fill each cup halfway. Bake for 15-20 minutes. If you use a larger 6-muffin pan then bake 20-25 minutes. Muffins should begin to slightly brown on the top and edges when they are ready.

SO HOW'D IT GO?

These were super easy. I made a few changes (doesn't everyone?) switched raisins for chocolate chips. Seeing as I had chocolate and 3 ripe bananas, I thought that'd be sweet enough so I left out the sweetener, added an extra 1/4 cup of apple sauce, then just a splash of soy milk to make up for the lost liquid. I decorated them with half a dried fig each :)

Thank you!
