1 ripe banana, mashed
juice of 1/2 lemon
1-2 tablespoons raw sugar
5 tablespoons unbleached white flour
2 tablespoons vegetable oil
1 tablespoon powdered sugar
1/2 teaspoon cinnamon
1. To banana, mix in lemon juice and sugar. Mix in flour 1 tablespoon at a time and mix.
2. Heat oil until hot enough for frying, then lower heat a bit so oil doesn't burn. Drop banana mix by spoonfuls and fry on each side for 2 minutes or until golden and puffy.
3. Place on a paper towel to absorb excess oil and let cool until they are just warm.
4. Mix powdered sugar and cinnamon and cover puff in this mix. May serve cold or warm! Enjoy!
