Banana Pancakes

What you need: 

1 cup flour
2 teaspoons baking powder
1 ripe banana, mashed
1 1/4 cups nondairy milk, divided (I use vanilla or regular soy)
1/2 teaspoon cinnamon
fruit or maple syrup, to serve

What you do: 

1. Sift together baking powder and flour. In a separate bowl, mix the mashed banana with 1/2 cup milk until there are no lumps.
2. Add to baking powder and flour and add remaining milk and cinnamon. Stir together until just mixed.
3. Cook pancakes in a lightly oiled frying pan until golden brown on each side.
4. Garnish with fruit and/or maple syrup. Enjoy!

Banana pancakes are even better when you just slice the bananas instead of mashing them!

These were spectacular!  ;)b I added the touch of coconut slivers and vanilla as Keda suggested, and added about 1 tbsp of agave nectar to the batter - then when it was cooking sprinkled a touch of cane sugar mixed with cardamom on top. Perfect sunday brunch for two - my preference is just a tad blueberry syrup to top ^^

These are AWESOME!  Absolutely the quickest, easiest pancake recipe ever.  Extra points for only using a few ingredients!
So, so fluffy and good.  This is my new pancake recipe! Love it.

this was a good, easy recipe. after reading keda's review,  i added some shredded coconut.  they're not overly sweet, which i liked.  i had mine with earth balance and my husband had his with strawberry syrup.

second banana pancake recipe i make and i like them both! i also added a bit of vanilla-butter essence and a heaping tablespoon of coconut slivers. yummmy with strawberry syrup.  ^-^
