Banana Nutty with Dried Figs Muffins

What you need:

1 cup wholewheat flour
1 cup all purpose flour
1 teaspoon baking powder ( double acting type )
1 teaspoon baking soda
1/3 cup unrefined (raw) sugar
1/2 teaspoon powdered egg replacer + 1 1/2 tablespoon of water (like Emerg-c)
1/3 cup canola oil
2/3 cup soymilk
2 bananas, mashed
1/3 cup mixed dried figs and walnuts, chopped

What you do:

1) Preheat oven to 350 degrees Fahrenheit.
2) Add all dry ingredients together, mix well.
3) Add wet ingredients, with egg replacer mix first, followed by mashed bananas, oil and lastly soymilk. Mix well and lightly fold in walnuts and dried figs.
4) Lightly grease muffin pan and spoon the mix into the tins. Bake for 25 minutes. Muffins should be ready when toothpick is clean.
Note : i used only 1 fig because it's just enough for me to make 6 muffins. To be honest, it's best that you decide on how much walnuts and dried figs you want to add according to your own desire.
Source of recipe: I've been using vegweb's recipe for quite a while now, and now i'm all on my own journey to inventing my own vegan baking recipes and share with others here :)My aunt brought a box of dried figs from France and nobody is eating it at home, perhaps now i'm putting it into good use. A healthy substitute of sugar , even though i do add sugar in this recipe. Comments are welcomed ! Thanks guys and good luck.
