Banana Nut Spice Muffins (soy-free)

What you need: 

3 ripe bananas, mashed well
1/4 cup vegetable oil (I use canola)
1/8 cup unsweetened applesauce
3/4 teaspoon vanilla extract
2 tablespoons + 2 teaspoons maple syrup
2 cups flour
1/2 cup sugar
1/2 cup brown sugar
1 teaspoon salt
1 1/8 teaspoon baking soda
about 1 tablespoon ground cinnamon
1 teaspoon ground nutmeg
2 dashes cloves
dash ginger
1/2 teaspoon cocoa powder
chopped walnuts or pecans
cinnamon and sugar (for dusting)

What you do: 

1. Preheat the oven to 350 degrees F. Mix the bananas with the maple syrup, oil, vanilla, and applesauce. In another bowl, mix the flour, sugar, salt, baking soda, and spices together. Mix the wet mixture and the dry mixture together, and fold the nuts in.
2. Spray a muffin pan with cooking spray. I dust the pan with cinnamon and sugar, but thats optional. Dollop the dough in, filling the tray 2/3-3/4 full.
3. Bake until a toothpick inserted in the center comes out clean. When using a mini-muffin pan, my oven takes about 10 minutes; using a regular-sized pan, they took about 15.
Eat them warm with a glass of cold almond milk. Bon appetit!
