Banana Bonanza Bread

What you need: 

6 ripe bananas
1/2 cup sugar
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
cinnamon, to taste

What you do: 

1. Preheat oven to 350 degrees F and lightly coat a loaf pan with nonstick spray. Mash the bananas (better if they're a bit overripe) until not quite smooth (we kinda like it a bit chunky!).
2. Mix in the sugar and vanilla until incorporated. In a separate bowl, sift the dry ingredients together, then add to the banana mixture and stir until blended.
3. Pour into prepared pan, and sprkinle some cinnamon on the top, if desired. Bake for 1 hour.
This recipe is so ridiculously simple but so delicious! It seems to come out perfect every time, in every kind of dish we've tried baking it in! Enjoy with a tall glass of vanilla soy milk! Yum! Healthy eating!

SO HOW'D IT GO?

I am obsessed with this bread! I added a handful of cinnamon and some nutmeg. It was amazing. I love to spread peanut butter on my slice for breakfast. It's amazing!

I'm new to this kind of bread and hardly ever like 'sweet'breads and stuff but this is great! I added dates and walnuts because I only had about 4 not very ripe banana's. Ow and I added a bit of palmsugar. It was delicious!! I'm going to bake some more today and use a muffintin! Great recipe!!! :)

VERY easy.  Took me like 5 minutes to whip up then bake. 
I made half the recipe too, and used muffins instead of a loaf and they are delicious!  Just like banana bread should taste.

This is a good banana bread. I had never made banana bread with more than about 4 'nanas, so this was a bit different. I cut down on the sugar a bit, didn't sift, and used whole wheat pastry flour. I made mine in a silicone loaf pan (standard size), and it baked for a bit less than an hour. The top browned nicely, and I turned it down to 325 for the last few minutes to make sure the inside was mostly done. I left my bananas a bit chunky, so it has some gooey bits in it. I have a favorite standard/traditional-like banana bread, but this is a good/different one. Very easy, too!

This was a great recipe to use up the crapton of bananas my partner dumpstered the other day.  I also added chocolate chips to the batter.  Try it!

Well, I ran out of vanilla extract, so I didn't use it. And I subbed wwpf forthe reg. flour and about 3-4 tbl.of agave nectar instead of sugar. It came out great, thanks!

Excellent ratio of bananas to other ingredients.  I made it with whole wheat pastry flour, brown sugar, and TONS of cinnamon.  This recipe rescued me yesterday after another one from this site failed - guess it wasn't my oven's fault after all, because it cooked this perfectly!

I made this bread, but I only had three bananas, so I made a half recipe.  I'm not good at baking bread, so I added a half teaspoon of Ener-G egg replacer to help ensure it held together, but I don't think the recipe needed it.  I also had eight walnut halves on hand, so I chopped them and added them to the batter.  Since I only had a half batch, I poured the batter into a squares pan, so that the mini-loaves are roughly the size of a square cupcake.  It made eight squares.  I reduced the baking time to 30 minutes.  They were moist and had a nice banana flavor.
