Banana Black Beans

What you need: 

2 cups cooked black beans (if using canned, rinse well)
1/2 cup coconut milk (light can be used)
1/4 cup plain nondairy milk (I use soy)
2 stalks green onion, diced
1 heaping teaspoon hot chili powder
2 bananas, chopped into 1/2" pieces

What you do: 

1. Place cooked black beans into a medium saucepan with coconut milk and nondairy milk and heat on medium-low for about 3-4 minutes. Stir occasionally.
2. Add chopped green onion and hot chili powder, and allow the liquid to reduce and become bubbly, still stirring occasionally.
3. Add chopped banana, stir, and allow to heat through. (banana shouldn't be added too early or else the pieces lose their shape and become mushy). Add more milk(s), if needed.
Served on a bed of brown rice, with a salad on the side this is easily one of my favourite quick and healthy meals and is so, so delicious!!!

I made this today! It was delightful, although I skipped on the coco milk and onions still yummy! It reminds me Vietnamese black bean coconut sweet soup dessert! My mom makes it really good :)
Like eating banana's with rice or between french bread, lol

This was very good! I served it over plain old cornmeal mush and it went quite nicely.

I love this recipe. So easy and a wonderful complement of flavors. I often make it when we have guests for our Friday night Shabbat meals and it is always a hit.

I can understand how people wouldn't like this recipe. It's an interesting combination of flavours so I guess you either love it or you hate it. For me I LOOOOOVED IT!!! Spice...onion...bananas...black beans....I just had to try it and I'm glad I did! Thanks!

I love, love, love this recipe! 

This time I made it with pinto beans and chickpeas because sadly I was all out of black beans.  I served it over quinoa.

I did not like this at all.  I was very disappointed because of the good reviews.  Maybe I did something wrong?  It was sweet.  Was it supposed to be sweet?  Also, I could really taste the coconut.  I didn't serve it with rice -- could that have helped? 

Yes, the recipe is supposed to be sweet... it has fruit in it!

I guess I fogot to comment on this recipe.  I have a tendency to do that when it is a recipe that I did not like.  I am sorry, but this turned out really nasty.  I tried to salvage it by doing several things and nothing helped, I just could not cover up the taste of banana.  I wound up throwing it a way, luckily banana, rice, and beans are all cheap.  I just can't get my taste buds used to the idea of banana flavored black beans, pretty gross.
