Meat from 1 young Thai coconut
1/2 cup coconut water
4 to 6 dates, soaked to help blend
juice of 1/2 lemon
1/2 sliced banana (fresh or frozen)
1/2 cup mixed berries (fresh or frozen)
1/2 Tb finely shredded coconut for garnish
Place all ingredients in blender except for banana and berries, and blend till completely smooth. In a decorative glass, layer yogurt and fruit evenly. Garnish with finely shredded coconut.
