Baked Italian Tofu

What you need: 

2 pounds extra-firm tofu
1 bottle vegan Italian dressing
1 cup very dry red wine
1 tablespoon red pepper flakes
1 palmful kosher salt
1/2 cup + 1 tablespoon olive oil
1 tablespoon flour

What you do: 

My picky kids request this for a special birthday meal!
Drain and cube tofu. Marinade in dressing and wine for at least 2 hrs, but preferably overnight.
Preheat oven to 350. Pour 1/2 cup olive oil in a shallow baking dish.
Pour off and reserve marinade. Coat tofu cubes in kosher salt and place in olive oil. Bake for 45 minutes.
In a saucepan heat 1 tablespoon olive oil, add flour. Whisk in remaining marinade and red pepper flakes. Cook until thickened.
Serve tofu over rice and mixed veggies. Top with sauce, and watch your kids GOBBLE IT UP!

good recipe. i think there may be too much wine in the ingredients and also use salt sparingly, otherwise this is a fantastic dish.

I really like this, since I LOVE italian dressing over pasta salads and the like.  I think next time I'll use a little less dressing and bake the tofu for a bit longer, but I'll definitely be making this again. It was good over corn and steamed broccoli.  Thanks for the recipe!
