Baked Garlic Tofu (Great for salads and wraps)

What you need: 

1 pound block extra firm tofu, chopped to 3/4" cubes
1/4 teaspoon salt
5 cloves garlic, minced
olive oil, to taste

What you do: 

1. Preheat oven to 400 degrees F. Place tofu in a casserole dish so that it is crowded but not piled.
2. Sprinkle salt and garlic over, and drizzle olive oil. Mix well so each piece has some of everything on it.
3. Place in the oven for 20 minutes.
4. Stir and put back in the oven for another 25 minutes, so they will be a little crusty around the edges.
Yummy hot or cold. Great for topping green salads, in veggie wraps, or in scrambles with basil, oregano, or dill and veggies.

SO HOW'D IT GO?

This tofu is yummy!  It is excellent as a base for ant number of dishes.  My husband liked his topped with BBQ sauce.  We will make this again!

Tofu sits in water so it doesn't dry out, except for when it is vacuum sealed in plastic.  It gets funky if left to dry. 

Yes, I believe this recipe would add some nice flavor and texture to a pasta salad, but since you're not familiar with tofu I'll tell you that tofu is LIKE pasta in that it's great when flavored with something, but bland on it's own.  If you're going to put the tofu in the pasta salad I would definitely recommend a fair amount of seasoning too.  (Basil, parsley, oregano, and marjoram are all yummy in a  pasta salad.)  Sorry if that's too much information.

Sounds like a great recipe. I've never tried Tofu before, and this may sound crazy, but.....In the package, why is the Tofu so watery? Can you use this recipe in a pasta salad?
