Baked Doughnut Nuggets

What you need:

Donuts:
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon ground nutmeg
1/2 teaspoon salt
1/2 cup vegan butter, at room temperature
1/3 cup sugar
1 egg substitute (I use 1 tablespoon ground flaxseed + 3 tablespoons water)
2/3 cup nondairy milk (I use soy) Topping:
2 tablespoons powdered sugar
1/4 teaspoon ground cinnamon

What you do:

1. Preheat oven to 350 degrees F. For donuts, combine flour, baking powder, nutmeg, and salt in medium mixing bowl.
2. In a separate bowl, whip butter and vegan sugar until light and fluffy. Beat flax and water together for egg, and let sit 1-2 minutes.
3. Add egg substitute to butter mixture, and beat until well-blended. Add 1/2 the flour mixture, mix; stir until smooth. Add 1/2 the milk; stir again until smooth. Repeat.
4. Spoon batter into miniature muffin tins until 2/3 full. Bake for 20 minutes. Let cool 5 minutes before removing.
5. For topping, in a bowl, combine powdered sugar and cinnamon. Roll nuggets in sugar mix, and enjoy!

SO HOW'D IT GO?

They were a bit crumbly, which may be my fault for over mixing, but they were also a bit bland. I think they need vanilla or almond extract in the batter. They were great w/ chocolate frosting, though.

These were so good! I used apple sauce instead of soy butter, and they were still delicious. I placed blobs of dough on a baking sheet and used my finger to make a hole, so they turned out like cake donuts! After baking and cooling, I covered them in powdered sugar. They were yummy!!!

I absolutely LOVE these..I'm happy just to eat them plain, no toppings. I've always liked the plain cake donuts the best and the nutmeg makes it taste the same to me..Thank you for this fantastic recipe...

Yum!  These were really easy to make and tasted delicious!  My husband loved them, too and has begged me to have them in the house always.

Thanks for a great idea!  ;)b

:DThese were sooo yummy! Although they were slightly healthy tasting, I didn't mind. It made me feel less guilty about them!  ;D

I used chocolate almond milk for the soymilk and it gave it a slight chocolatey flavour that I'm just dying to have more of! I also used a little vanilla extract as well. I used an icing consisting of chocolate almond milk, butter, icing sugar, and vanilla extract (I don't know how much of each, though) and with them all done, they taste like the old fashioned glazed from timmies. Yum. Making these again, for sure!!!

Love these!  Not exactly the texture of traditional doughnuts, but they have a great doughnut taste and are delicious!

My donuts didn't look anything nearly as gorgeous as some of those pictures, haha. My little sister loved these when I made them and donuts were her favorite food before she went vegan. Thanks for the recipe!
