Baked Doughnut Nuggets

What you need:

Donuts:
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon ground nutmeg
1/2 teaspoon salt
1/2 cup vegan butter, at room temperature
1/3 cup sugar
1 egg substitute (I use 1 tablespoon ground flaxseed + 3 tablespoons water)
2/3 cup nondairy milk (I use soy) Topping:
2 tablespoons powdered sugar
1/4 teaspoon ground cinnamon

What you do:

1. Preheat oven to 350 degrees F. For donuts, combine flour, baking powder, nutmeg, and salt in medium mixing bowl.
2. In a separate bowl, whip butter and vegan sugar until light and fluffy. Beat flax and water together for egg, and let sit 1-2 minutes.
3. Add egg substitute to butter mixture, and beat until well-blended. Add 1/2 the flour mixture, mix; stir until smooth. Add 1/2 the milk; stir again until smooth. Repeat.
4. Spoon batter into miniature muffin tins until 2/3 full. Bake for 20 minutes. Let cool 5 minutes before removing.
5. For topping, in a bowl, combine powdered sugar and cinnamon. Roll nuggets in sugar mix, and enjoy!

SO HOW'D IT GO?

These are fantastic!! If you're Canadian, these are reminiscent of the Old Fashioned Glazed at Tim Horton's.  Yummo!  :)>>>

I glaze them with Alton Brown's Doughnut Glaze recipe using So Delicious Coconut Milk and they are SO good. 1/4 cup "milk", 1 teaspoon pure vanilla extract, 2 cups confectioners' sugar.

These doughnuts deserve more than 5 stars!! I haven't had a doughnut in a long time, and this is what I remember. They taste just like my old favorite non-vegan cake doughnuts. I can't believe how easy they were to make, and how much they taste like DOUGHNUTS!! The texture is spot on too. Sure, they were shaped like a muffin. Which was weird, and I was a bit skeptical. But the taste was phenomenal, so it doesn't even matter what shape they are in. I topped some with cinnamon & powdered sugar & wolfed them down hot right away (amazing!) then topped the rest with the Chocolate Glaze (http://vegweb.com/index.php?topic=6489.0) and sprinkles which was incredible. Thank you, so much!! I'm going to make these for everyone I know. Killer recipe!!!!

Oh my gosh this recipe is yum!!! I have a little convection oven in my flat so a muffin tray won't fit, so I poured the batter into a glass tin and cut it into squares once cooked. It came out perfectly which surprised me, and I was also surprised I didn't eat all the batter!!!
Thankyou for this recipe!

I don't know if I made these incorrectly or not, but they did not turn out ANYTHING like a doughnut...they tasted like very low-sugar bread on cupcake form. Had to throw them away they were so bad. I even put chocolate frosting on them and STILL couldn't eat them. It upset me because I LOVE doughnuts more than anything  :'(

I've made this recipe so many times, I feel I must leave a review just to say how much I love it. I've made it exactly as the recipe dictates, I've made it swapping in applesauce, I've made it with almond milk instead of soy, I've made it minus the "egg." I love love love love love this recipe. No matter what I do, on purpose or on accident, these little nuggets end up delicious. I usually make a bowl of icing for them instead of a cinnamon sugar topping, and do half vanilla and half chocolate. They're great fresh from the oven, great covered in icing, great with tea, just GREAT.  :)>>>

These are fantastic! I don't know that I can comfortably call them doughnuts, but maybe that's the compromise when you don't deep-fry them. I made them at my parents' house, and they don't have a mini-muffin pan, so I used their poached-egg pan! It was perfect!
I made some jelly-filled, which was good too! And I did some which chocolate icing and coconut. Soooo good. The cinnamon topping here might be good, I didn't use it because I was skeptical. I added margarine and soymilk to it to make it more like icing.

These were simple, easy, and AWESOME!  Totally killed my craving for Little Timmies.

The ONLY thing I did different was used vanilla flavored almond milk, instead of soymilk and they were still perfect!
