Baked Cauliflower

What you need: 

1 head cauliflower
2 tablespoons prepared mustard
2 tablespoons tahini
vegan cheddar or vegan american cheese, sliced, optional

What you do: 

1. Preheat oven to 350 degrees F. Place the whole head of cauliflower in a pot with a couple of inches of water. Cover and steam untill almost tender.
2. Place on a baking sheet. Mix tahini and mustard together and slather on cauliflower. Lay cheese slices on over the cauliflower.
3. Bake until cheese is hot and gooey.
This recipe may sound strange but, we have eaten this for years. Sometimes this is all we have for dinner.'

I found this recipe in a cookbook last year, and I make it whenever I have the chance.  I use Dijon mustand and chedder cheese, and wow--you'd think a whole head of cauliflower would last longer than thirty minutes, wouldn't you?
