Backpacking Vegan Pudding

What you need:

1/2 to 1/3 cup sugar
1/3 to 3/4 cup cocoa powder
3 tablespoon Instant Clear-Jel
1/4 teaspoon salt
3 tablespoons powdered soy milk - vanilla or plain flavor
1 teaspoon vanilla powder - optional
1 1/2 to 2 cups water

What you do:

Note : Instant Clear-Jel is a no cook corn based thickener. Search on theinternet for your best price. You can substitute it, but I wanted a no-cook version to cut down on fuel consumption while backpacking. It is not the same as Sure-Jel.
1. Mix all dry ingredients in a regular size zip-top baggie.Shake it again very very well. The Instant Clear-Jel sets up fast, so youwant it well mixed to reduce clumps.
2. In camp, add 1.5 cup cold water to bag and immediately begin squishing the resulting slurry thoroughly until all lumps are gone. You can do this in a bowl with a fork, if you prefer. If needed, add up to 1/2 cup more water, and mix in.
In town, this makes 4 elegant servings. In the wild, it makes at mosttwo servings, if you are very nice person. Be sure to Leave No Trace.
