Awesome Raspberry Chocolate Chunk Cookies

What you need: 

1 cup flour
2/3 cup brown sugar, packed
6 tablespoon soy margarine
2/3 cup oatmeal
2/3 cup coconut
2 3oz vegan Cloud 9 Red Raspberry Chocolate bars, broken in chunks
1 teaspoon vanilla
2 teaspoon baking powder
dash salt
soy milk

What you do: 

Cream softened margarine with brown vegan sugar. Add all other ingredients except soy milk. Pour soy milk into batter, maybe about 1/3 cup to start, and mix. Add soy milk as needed until batter is blended but still thick. Dont over mix. Drop blobs of the batter onto a cookie sheet,. You should have about 18 cookies. Cook in a preheated oven, 350 degrees until cookies are golden, about 15 minutes.

SO HOW'D IT GO?

Substuted soy milk for about 1/2 - 3/4 cup raspberries freshly picked today, these came out amazing!

these are the best cookies ever.  i have made and loved them several times, but what bumped them into first place in my baking repertoire is the fact that every single one of my omni family members devoured them and thought they were delicious when i baked up a few batches during holiday gathering time.  the coconut and oats create a nice texture, without making the cookie specifically "oatmeal" or "coconut."  the title is correct - the cookies are Awesome, but i would also say they are amazing and outrageous.  truly, truly, truly outrageous! :jamming:

These were good!  :) However, I did make some changes; I didn't use coconut, I added 1/2 tsp raspberry extract, a handfull of chocolate chips, and I used 1 Endangered Species raspberry chocolate bar. I made them in 2 batches- the first I didn't think were cooked after 15 mins so I kept put them back in the oven. DON'T DO THAT, lol, because I burned the crap out of them.  :P The next batch I cooked for 15 minutes but I let them sit on the pan to harden and then they got stuck and I had to pretty much scrape them off and this broke the cookies. I suggest using a little cooking spray or something to grease the cookie sheet with. They were pretty tasty though!  ;D

;D these cookies are fantastic.  i make them all the time and everyone loves them, even ppl who don't ordinarily like oatmeal or cocnut.  I often substitute regular chocolate chips for the rasberry chocolate chunks and they are still great.
