Awesome Loaf

What you need: 

1/3 pound tofu (firm or extra firm)
1 1/2 cups cooked brown rice
1 1/2 cups cooked kidney bean or lentils
1/3 cup ketchup
2 tablespoons Dijon mustard
1/2 small onion
1 clove garlic
salt and pepper, to taste
thyme, to taste
sage, to taste

What you do: 

1. Preheat oven to 375 degrees F. Lightly oil a loaf pan.
2. Blend all of the ingredients in a food processor until combined.
3. Press mixture into prepared pan, and bake 60 minutes.
This tastes amazing on a sandwich.

SO HOW'D IT GO?

This recipe was a good base start, but it needed a lot of massaging.  I heeded the advice of the chefs who tried it out first and because of that, it turned out FABULOUSLY!  Here's what I added to the original recipe:

- 1 Tbs. dried thyme, 1 tsp. sage, basil and parsley

- 1 Tbs. soy sauce and vegan Worcestershire sauce

-I don't have a food processor so I just mashed everything with a potato masher

- 1 cup dry bread crumbs

- 2 egg replacers (I used Ener-G)

- less ketchup

- I used a shallow casserole dish, not a loaf pan, and the consistency was solid and not mushy the whole way through. 

- Because of above, It only took 40 min in the oven.

After the revised 40 min in the oven I let it sit on the counter for 10 minutes and was able to cut it into real slices.  It was very much a loaf and SO yummy!  It was even better with mushroom gravy drizzled over the top.  I will make this again when I have LOTS of time to make it.

Hi,

Can someone please let me know the quantities of each herb they seasoned with? I made this recipe and it didn't turn out very tasty, but that is because I think I didn't season it properly.

Any help would be appreciated as I can tell it has the potential to be a great recipe.

Also, I added about 2 - 2.5 Tablespoons of breadcrumbs and it did have a great consistency.

This was quite bad in my opinion.... and all the ketchup... pretty gross. I still won't give up on my mission to find a great loaf though!

I made this last night for my EXTREMELY picky carnivore little sister. She said it looked like mush, but she ate it up! I loved it as well, but like everyone else i couldn't get it to cook all the way. I loved how it got a little crispy on the outside, but inside it was pretty soggy. I heard that it might help to add 1/4 cup of wheat flour. Has anyone successfully found a solution to our extra-moist problem?

Presentation aside, I thought this recipe was amazing... If nothing else, the "mush"' presentation gave it an element of surprise  ;)

WOW!!! As the title states, this loaf is AWESOME!!! It tastes so great! I made it at ten-thirty in the evening, and I think it is the best dinner I have had in a while. And, I have some leftovers!!! YAY!  ;D Thank you so much for the recipe, and I LOVE AWESOME LOAF!!!  8)

As other reviewers have said, this does firm up in the fridge overnight, and is SO GOOD the next day as well! Thanks again, prettyin_punk!  :)

Mine came out very soggy.  I left it in the oven longer and increased the temp a bit, but it was very mushy.  I used lentils - maybe it's better with beans?  I don't know.  Suggestions?  I added bread crumbs as someone suggested and it was still soggy.  :(  Tasted good - maybe will heat up better and more firm tomorrow.

Not bad.  I took the suggestion of adding some bread crumbs to firm it up.  It had too much of a strong ketchup taste for me so next time I'll try tomato paste or just diced tomato.  I look forward to trying the leftovers as a sandwhich.  Thanks for the recipe.  :)

The only thing not awesome about this loaf is now it's gone and I want more!

Seriously, though- it was soooo good sliced up on sandwiches.  I particularly enjoyed using 2 toaster waffles for bread.
