Awesome Jambalaya

What you need: 

oil, as needed
1 large yellow onion, chopped
3 ribs celery, finely chopped
1 green bell pepper, finely chopped
1 teaspoon salt
2 (12 ounce) packages vegan chorizo (I use Soyrizo) (or 1 package vegan chorizo and 1 package vegan chicken)
2-3 teaspoons Cajun seasoning
2 (15 ounce) cans diced tomatoes, undrained
1 (15 ounce) can okra, drained and rinsed
hot sauce, to taste, optional

What you do: 

1. Heat some oil in a pot over meduim-high heat. Add onion, celery, and bell pepper to heated pot and stir semi-frequently until everything is nice and soft, about 5 minutes.
2. Add the salt and cook for a minute or two longer, stirring frequently. Add the vegan chorizo and cook for 5 minutes. Stir well and cover for 5 more minutes, stirring once or twice.
3. Add seasoning, okra, tomatoes and hot sauce (if using), stirring well. Cover and cook once more for 5-10 minutes, stirring somewhat frequently until it begins to bubble and it looks and tastes like it's ready to eat.
You could also seed (or not) and finely dice a jalapeño and add it in with the onion, bell pepper and celery if you want an extra kick. I haven't tried it, since my Fiancée isn't a big fan of spicy food, but I'd imagine it would taste really good. Enjoy!

SO HOW'D IT GO?

I made this tonight, without the okra.  Added some drained and rinsed canned black beans and used Paul Prudhomme's salt free seasoning instead of cajun seasoning.  Ate it on top of spaghetti squash - was great!  I think it would be nice as is, over brown rice or some other grain/pasta as well.
