Awesome Coconut Beer Batter for Onion Rings or Veggies

What you need: 

1 cup flour
1 cup beer
salt, to taste
grated coconut, for dredging
onion rings, zucchini, tofu bites, etc, for frying
oil, for frying

What you do: 

1. In a bowl, combine beer and flour and mix well. Add salt to batter, if desired. The next step is vital: Cover with cling film and allow to stand for three hours at room temperature. This helps the batter thicken and "bind" better to whatever you're frying.
2. Place grated coconut in a shallow dish. Dip veggies in batter to coat, then roll in coconut.
3. Fry until golden in oil and drain on kitchen paper. Wait until they're cool enough to eat--that's the hardest part!
The coconut is an awesome addition to onion Bhaji!!
Source of recipe: This recipe is based on one my friend Richard has used forever. The awesome thing about this batter is that leftovers can be reheated later without losing their crispy crunchiness.
