Avocado Pita

What you need: 

1 avocado
1 large plum tomato
half a small onion
1 clove garlic
1 tablespoon olive oil
1/4 cup canned black beans
1 pita bread

What you do: 

Chop the avocado, tomato, and onion. Mince the garlic or put throuh a garlic press. Rinse the beans. Combine the vegetables with the olive oil and stir gently. Cut the pita in half and stuff each side with the avocado mixture.

SO HOW'D IT GO?

I thought this was a little bland so I tossed in some pepperchinis and that did the trick  ;)

I used all the ingredients listed in the recipe but instead of a plum tomato, I used half a large normal tomato and I added a pinch of salt. I put everything in the blender and then I had enough to put onto 5 medium sized pita breads. I did not like the taste, but it might just be me.

I actually used this recipe to come up w/an avocado spread for a sandwich i wanted to make. i used 2 avocados, a little bit of chopped onion, some diced garlic, a bit of sesame oil, a lot of lemon juice ( to keep it green), salt, pepper, spanish paprika (not much flavor there) all in a blender (to get it as smooth as possible... and for the record i despise my blender). it turned out alright but i'm sure there are things i could add/do to this to make it amazing. if you wanted to use it for a pita sandwich, i think adding black beans to the mixture would be wonderful.
