Avocado Pesto

What you need: 

1 medium ripe avocado
1 cup fresh basil, loosely packed
1/2 cup spinach, loosely packed
2 tablespoons pine nuts
2 tablespoons nutritional yeast
1 teaspoon minced garlic (or 2 cloves garlic)
1 tablespoon olive oil
1/2 teaspoon salt and pepper

What you do: 

Place all ingredients into a food processor and blend until smooth.
This is great on spaghetti, but I’ve also found it’s tasty slathered on pieces of crusty French bread for a snack.
Source of recipe: I wanted some pasta, but was tired of tomato sauce. So I decided to use up some avocados and basil that were about to go bad, and came up with this wonderful recipe!

Ok, this is the best thing I have ever tasted! I am a huge avocado fan so I knew this would be good. It's creamy, had a beautiful color and was just SO yummy. The only change I made was I added sunflower seeds instead of pine nuts (I'm not a huge fan of em). I used some fresh basil from my little herb garden, blended it all up and I was in heaven. I seriously can't wait to make this again... so much so, I might go to the store again today to get the missing ingredients!

Very good!  Something different, it's got that pesto taste, only creamier.  Made blackbean and salsa salad with it. http://vegweb.com/index.php?topic=29546.0
