Avocado Cilantro Dressing

What you need: 

1 large or 2 smaller ripe avocados
1 to 2 cloves garlic
1/2 bunch fresh cilantro, or to taste
2 to 4 tablespoons balsamic vinegar or red wine vinegar (or both), to taste
2 tablespoons vegan mayonnaise (e.g., Vegenaise)
juice 1 lemon
juice 1 lime
salt, to taste
pepper, to taste
2 to 4 tablespoons olive oil, to taste

What you do: 

1. Except for the olive oil, put all ingredients into a blender or food processor, and blend until mixed.
2. Slowly add the olive oil and blend until combined.
3. Add more olive oil or vinegars to thin to desired consistency (it is a little thick). It's best if you let it cool for a bit in the fridge before using.
This also makes a good dip for chips or pita bread, and a good sandwich spread, too.

SO HOW'D IT GO?

This was yummy, but I thought that the vinegar flavoring was overwhelming.  I might try 1 tbsp next time and just add extra lime juice or olive oil if I need more liquid.
