Avacodo and Mushroom Melt

What you need: 

4 slices bread (I used 100% whole grain bread)
6 to 10 button mushrooms, sliced
1 medium size tomato, sliced
1 ripe avocado, sliced
Alfalfa sprouts
2 vegan mozzarella cheese slices
Vegan mayonnaise, as desired
Mustard, to taste
Vegan butter, as desired
Salt and pepper, to taste

What you do: 

1) Take one slice of the bread and butter. Place the bread butter side down onto the skillet and cook over medium heat. Just make sure it's not cooking too fast so it won't burn or stick to the skillet. Look every so often to see if the bread that was butter side down on the skillet has browned. Once the bread has browned, remove and set on a plate. Spread vegan mayonnaise on top.
2) Take the other slice of bread and repeat step one. Top that piece of bread with 1 slice of vegan cheese and half of the sliced mushrooms. Once the cheese has melted and the buttered side bread that is placed down on the skillet has browned, remove and set on the plate. Top with half of the avocado, alfalfa sprouts, and 2 tomato slices. Put salt and pepper to taste. Then, spread mustard on top of the mayo. Place the bread that has the vegan mayo and mustard on top of the bread that has the veggies on it. Repeat with the remaining ingredients to make the second sandwich.
3) Slice the sandwiches in half and enjoy!
Source of recipe: I modified this recipe from a recipe I found online. I am just making a guess at the preparation time and the cooking time.

I made these for a quick dinner a few nights ago. Very yummy!
I used for hummus instead of vegan mayonnaise. Also added some spicy mustard and a vinaigrette dressing as condiments.
