Asian Noodles with Peanut Butter and Chilies

What you need: 

1 pound dried soba noodles or spaghetti
1/8 cup sesame oil
1/4 cup soy sauce
1/2-1 tablespoon sweetener
1 1/2 tablespoons balsamic vinegar
1-3 tablespoons spicy red chili sauce
4 tablespoons peanut butter
1 cup fresh cilantro, chopped
8 green onions, sliced
handful chopped peanuts, to garnish, optional

What you do: 

1. Cook noodles in large pot of boiling, salted water until just tender. For sauce, whisk sesame oil, soy sauce, sweetener, vinegar, chili sauce, and peanut butter.
2. Drain and rinse noodles when done. Using tongs, toss noodles with sauce.
3. Add cilantro and green onions. Garnish with peanuts, if desired.
This can be served cold or hot.

SO HOW'D IT GO?

delicious! i added coconut milk, didn't measure anything, and used about 10 ounces of soba noodles.  I thought the balsamic vinegar was really nice in this.  my green onions didn't look too good, so i sauteed half a yellow onion and some mushrooms.  it was so good that i had leftovers for breakfast the next morning!

This is really great with broccoli coleslaw stirfried and then add the peanut sauce and noodles!

Ok im inhaling this as I write! I don't really like peanut sauces but was trying to find a good one that I might like and this one definatly did it for me. I didn't have any sesame oil so I just put some oil in the wok with a ton of sesame seeds then poured the rest of ingredients in with it which made it extremely easy to stir. I omited the salt but would probably add it in if I were cooking it for other people I also added a bit of tamarind just because I had it. Anyways above all super super yummy recipe im going to be making this a lot!  :)>>>

Great recipe thanks. I only added a couple of dashes of chili powder and used rice wine vinegar. I also added a few squirts of lime juice. I want to try it with the coconut milk addition. Fast and tasty!

Overall this was good! I doubled the sauce recipe and sauteed some broccoli and carrots to add in. Next time I think I'll add peas as well. I didn't have any cilantro, so I left that out, and put the chopped green onions on the side since my husband doesn't like them much. Next time I'll omit the salt since my tamari sauce was salty enough on its own, and I'll use less sriracha sauce as well. (I believe I used four tbs since I doubled the sauce recipe, so next time I'll do two and increase from there.) Thanks for the recipe!

The flavor was very good, but I'm a wuss.  :-[ It was too hot with 2 TBSP of chili sauce. I'll definitely make it again, but I'm going to start with 2 tsps. of the chili sauce and increase it as needed. I like some heat, but this was a 5-glass-of- ice-water- and-my-mouth-was-still-on-fire kind of meal. If you are a wuss like me, make it but with a little less heat. It is delicious flavor wise.

Ok, so since this has become my all time favorite dish and I eat it everyday,  I have tried to modify it a little to lower the calories and fat. I just reduced the peanutbutter to 2 tbs, and added about 6 ounces of silken tofu. I basically threw that in my food processor and then added all of the other yummy ingredients. This turned out GREAT! And it made more sauce with lower fat. Yummy! Thank AC! :)>>>

I made this last night (with the addition of coconut milk) using chunky peanut butter. I was blown away in the first bite, the flavours were just so powerful. A really great sauce and such a quick recipe.

I just wanted to thank everyone who has tried this recipe, and I'm glad others enjoy it..since we love it so much. I also wanted to credit the Bon Appetit Tastes of the World cookbook for their "Asian Noodle Salad with Chilies and Peanuts" recipe (pg 26). The very first time I made that recipe, I had to modify it because of a lack of ingredients, but I loved my changes..and continued to modify until it became what it is now! Nevertheless, it was this original salad recipe that inspired me and gave me the idea for the recipe that I submitted.
